Chef Michael
“If I were to describe me, I’m a foodie!”, says Chef Michael Baugh of Let Them Eat Cake, located in South Tampa. “I have been blessed to be be in the same location for over 20 years.” Baugh, who is a Michigan native, has a motto and reason for his bake shop, it simply states “Nice Things 4 Nice People”.
Michael was inspired by his mother to become a chef, because she was a great cook in her own right, but as he states, “Not a pastry chef.” He started his journey to become the amazing chef he is today at the age of 14, lying to the employer about his age so he could feed his hunger for learning. He volunteered his time for free for two years in his chef infancy until he became quite skilled at his young age.
The technique that he is known for, Freehand Chocolate Sculpting, was a self taught technique that he developed out of need. “Chocolate is usually molded with the use of actual molds. I didn’t have any molds, so a started using a picture of what I wanted and started going at it.” The necessity to give people stuff they wanted developed into his own niche. From there he has gone to teach other chefs around the world his own technique of sculpting chocolate and pastry techniques in general.
In his bake shop he surrounds himself with not only skilled pastry chefs, but people he considers part of his family. “I consider this a family operated business. Because we all love each other here.”
